Salad From A Blender

Electric blenders are popular kitchen gadgets that are commonly used to fix food for the baby, or even to concoct a delicious beverage for the older members in the family. You want a salad for lunch?  The blender will do that for you, too. Or you can fix a sandwich filling using this very useful gadget.

It stands on the counter proud of its body in transparent glass standing on a pedestal of vibrant color. Consider the shine of its ever sharp blade.  It is a beautiful addition to your kitchen but one that do not require a lot of care. It will be appreciated for many years to come.

Delicious Holiday Gingerbread Cookies

For a scintillating holiday taste explosion, consider these awesome gingerbread cookies!  In addition to the ingredients, you will need a couple insulated cookie sheets, cookie cutters, and a rolling pin.

Ingredients:gingerbreadcookies

1 cup white sugar
2 tsp. ground ginger
1 tsp. ground nutmeg
1 tsp. ground cinnamon
½ tsp. salt
1 ½ tsp. baking soda
1 cup melted butter
½ cup evaporated milk
1 cup molasses
¾ tsp. vanilla extract
4 cups flour

Directions:

Preheat your oven to 375 degrees F, and grease your cookie sheets.  In a sizable bowl stir together all the dry ingredients, then combine the butter, milk, molasses, vanilla and lemon and mix them into the dry ingredients gradually.  The dough should be stiff but not stick to your fingers; add a little flour if necessary.  When the dough is smooth, use your rolling pin to roll out the dough about ¼ inch thick on a floured surface.  Cut out the cookies with your favorite cookie cutter, and place on your greased cookie sheets.  Bake for about 10-12 minutes, and let cool on a wire rack.  Great for holiday gatherings or gifts!

Sweet German Chocolate Cake

1 package (4 oz.) Baker’s German’s Sweet Chocolate
2 1/3 c. sifted Cake Flour
1 1/2 c. Sugar
1 t. Baking Soda
1/2 t. Baking Powder
1/2 t. Salt
2/3 c. Butter or Margarine
1 c. Buttermilk
1 t. Vanilla
2 Eggs

Melt chocolate over very low heat; cool. Sift flour with sugar, baking soda, baking powder and salt. Stir butter in mixer bowl to soften. Add flour mixture, 3/4 c. of buttermilk and the vanilla. Mix to dampen flour; beat 2 minutes at medium speed using one of your electric handheld mixers, scraping bowl occasionally. Add melted chocolate, eggs and remaining buttermilk. Beat 1 minute longer. Pour batter into 3 8-inch layer pans, lined on bottoms with paper. Bake at 350 degrees for 35 minutes, or until cake tester inserted into centers comes out clean. Cool in pans 15 minutes; remove from pans and cool on racks.  Spread filling on layers and stack.

Coconut Pecan Filling and Frosting:

Combine 1 cup evaporated milk, 1 cup sugar, 3 egg yolks, slightly beaten, 1/2 cup butter or margarine and 1 teaspoon vanilla in a saucepan. Cook & stir over medium heat until mixture thickens, about 12 minutes. Remove from heat.
Add 1 1/3 cups shredded coconut ad 1 cup chopped pecans. Cool until spreading consistency; beating occasionally.

My First Kitchen Aid K5SS Stand Mixer

As I had mentioned in my earlier article, baking is my favorite hobby.  Since I enjoy baking, I wanted to let you know that the Kitchen Aid K5SS Mixer was my 1st stand mixer that I had purchased soon after I had gotten married 22 years ago.   This was a white 10 speed stand mixer with a 5-Quart Stainless Steel Bowl.  It came with the Flat Beater, Dough Hook, & Stainless Steel Whip.  Also included was the Pouring Shield which is very useful since I always mix up a triple batch of cookies.   My husband takes cookies with him to work for morning & afternoon breaks so a single batch wouldn’t last very long.

The Kitchen Aid Stand Mixers have an Attachment Hub Socket for attachments such as a Food Grinder, Pasta Maker, Rotor Slicer/Shredder and other attachments.   My Kitchen Aid K5SS Mixer came with the Food Grinder.  The Food Grinder has come in handy.  I use it to grind up meat for ground meat and chili; fresh peaches to make peach preserves.

I used this stand mixer all the time to mix up cookies, bread dough, dough for cinnamon rolls, cakes, meringue for pies and anything else that the mixer could be used for.   Since I had used this mixer so much, I ended up replacing this mixer with the Kitchen Aid Mixer Professional HD Model that I presently use.

During the 1980s, the company made a concerted effort to expand its product line, introducing their ovens and stovetops in the middle of that decade. The traditional KitchenAid stand mixer sold in record numbers in the late 1980s and early 1990s. During the economic recessions of 1990 and 1991, KitchenAid remained profitable, continuing to gain market share due to its high-quality product and effective advertising campaign emphasizing multigenerational family reunion themes. The KitchenAid mixer–the original product from which the company name was derived–continues to flourish as well.
